Russian Goddess Salad

What

  • 3 cups of arugula
  • 1 medium cooked beet cut into julienne slices
  • ½ of multigrain or brown rice
  • 1 cucumber sliced
  • 1 tomato chopped
  • ¼ avocado sliced
  • ¼ green bell pepper sliced
  • 2 oz. of low-fat feta
  • ¼ cup chopped walnuts
  • 8 oz. broiled salmon
  • 2 table spoons of fat-free balsamic dressing (I love all Bolt House dressings)

How

In a foil lined oven pan broil salmon sprinkle with lemon juice and soy sauce, let rest. In a large bowl combine in layers arugula, rice, vegetables, feta, add salmon and top with walnuts and dressing.
