- 3 cups of arugula
- 1 medium cooked beet cut into julienne slices
- ½ of multigrain or brown rice
- 1 cucumber sliced
- 1 tomato chopped
- ¼ avocado sliced
- ¼ green bell pepper sliced
- 2 oz. of low-fat feta
- ¼ cup chopped walnuts
- 8 oz. broiled salmon
- 2 table spoons of fat-free balsamic dressing (I love all Bolt House dressings)

In a foil lined oven pan broil salmon sprinkle with lemon juice and soy sauce, let rest.
In a large bowl combine in layers arugula, rice, vegetables, feta, add salmon and top with
walnuts and dressing.
