Fried Rice

Chicken / Pork / Shrimp / Vegetarian

What

  • 1 - 12 oz. bag of Trader Joe’s frozen cauliflower rice medley w/peas, corn, red bell peppers (any cauliflower rice can be substituted)
  • ½ a tablespoon of your choice of oil
  • ½ tablespoon of shredded ginger
  • 1 egg + 2 egg whites
  • 8 oz. of chicken, pork, shrimp or extra vegetables diced and seasoned with garlic powder
  • 1 cup of precooked brown rice (I use Trader Joe’s frozen packaged rice ready in 3 minutes in microwave, Perfection!)
  • 2 chopped scallion
  • Soy sauce to taste

How

In a wok add half a tablespoon of any oil and stir fry your choice of protein until cooked about 5-7 min. Add frozen cauliflower rice medley and ginger, stir, cover, and cook for an additional 5 -7 min.

In a small bowl beat 1 egg + 2 egg whites and in a separate small wok or skillet coated with cooking spray fry the egg mixture, folding it until fully cooked about 3 min.

With a spatula break up the egg into small pieces and add to wok with cauliflower rice and your choice of protein. Add precooked rice and chopped scallion, top with soy sauce to taste, and serve!
