Berry Cobbler (dessert)

What

  • 2 tbsp. canola oil
  • 1 1/2 cup organic flour (wheat, white, or gluten-free)
  • 1 ½ tsp. baking soda
  • ½ tsp. salt
  • 1 1/2 cup of low fat milk + 1/4 cup of water
  • 2 tbs. sugar
  • 4 packets of Truvia (the best tasting stevia)
  • 1 tsp. vanilla extract
  • 2 cups of fresh or frozen assorted barriers (I love cherries, blueberries, raspberries, blackberries and strawberries)

Preheat oven to 425 degrees Fahrenheit. Place butter and oil in a 12-inch cast iron skillet. Heat in the oven until melted and fragrant, about 5 minutes. In a separate large bowl combine flour, baking powder, and salt. Add milk, sugar, Truvia, and vanilla; stir to combine. Add the melted butter to the batter and stir to combine. Pour the batter into the hot pan and arrange berries evenly on top. Return the pan to the oven and cook for 15-20 minutes or until the edges are browned and the batter is completely set. Remove from oven and cool for 15 minutes. Top with powdered sugar.
